Gooseberry Jam

1. PICK THE FRUITS AS THEY RIPEN.
2. WASH AND MASH THE FRUIT.
3. SLOWLY MIX IN AS MUCH SUGAR AS YOU HAVE FRUIT.
4. POUR INTO A JELLY GLASS AND SEAL.

 

Tart Gooseberry Crunch

Crumb Topping:
1 cup flour
3/4 cup rolled oats
1 cup packed brown sugar
1/2 cup soft butter
1 teaspoon cinnamon

Fruit Mixture:
3-4 cups gooseberries
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 teaspoon vanilla

Mix together crumb topping until crumbly. Press half of the crumbs into 9" greased pan. In saucepan combine sugar, cornstarch, water and vanilla. Bring to boil, add fruit and cool until clear and thick. Pour over crumb mix and top with remaining crumbs. Bake in 350 degree oven for 45 minutes or until brown. Cut in squares, serve warm with whipped cream.

 

Gooseberry Pie Recipe

Ingredients:
4 cups gooseberries
2 cups sugar
4 tablespoons Minute tapioca
1/4 teaspoon salt
1/2 teaspoon cinnamon

Directions:
Mash 1 cup gooseberries in a saucepan. Then add sugar, tapioca, and salt. Cook and stir this until it is bubbly, then cook 2 minutes more. Finally, add the rest of the whole berries.

Prepare crust for 2 crust pie. Pour berry mixture in bottom crust and dot with 2 Tablespoons butter. Put on the top crust and bake at 400 degrees for 35 to 40 minutes.

Hint: Cover the edges of the pie crust with aluminum foil to prevent burnt edges. It is also a good idea to place pie on pizza pan while baking. This will catch any berry juice that might spill over into the oven.

 

SPICED TART GOOSEBERRIES

2 quarts gooseberries
4 1/2 cups brown sugar

1 cup cider vinegar
2 inch stick cinnamon
8 cloves
1/4 teaspoon ground nutmeg
2 whole allspice

Wash berries, remove stems and blossom ends. Place sugar, vinegar, and spices together in a large pot, add 1/2 cup of water and boil for 5 minutes. Add gooseberries and simmer for 30 to 40 minutes. When the berries are tender and the syrup is thick, turn into hot sterile jars and seal.

Time: 1 hour

Yield: about 3 pints
